Copper River Salmon Filets with Plum Glaze
Makes 4 servings
1 pound Copper River Salmon filet
Salt and pepper to taste
1 small piece of ginger, finely chopped
1/4 cup plum jam
2 tsp lemon juice
Place salmon in a foil lined baking dish which has been coated with olive oil. Sprinkle with salt and pepper. Top with ginger.
In a small saucepan, melt the plum jam with the lemon juice. Pour 3/4 of the sauce over the salmon and bake in oven at 350 for 7 minutes.
Once fish is almost done, turn off oven and turn on broiler. Place fish under the broiler and brush with remaining plum sauce to glaze.
