Vidalia Onion Pie
Serves 4



2 ˝ cups thinly sliced Vidalia onions
(or any sweet onion)
2 Tbl olive oil
2 eggs
˝ cup heavy cream
salt and pepper to taste
1 cup shredded cheese

Sauté onions in oil in skillet until tender. Spread in pie plate.

Combine eggs, cream, and seasonings in bowl; mix well. Spoon mixture over onions. Top with cheese.

Bake for 30 minutes in 350 oven.
