Tea CakesMakes 6 dozen
1 cup granulated sugar
1 cup butter (2 sticks, see note)
2 eggs
1 tablespoon water
1 teaspoon vanilla
Pinch of salt
1 teaspoon baking powder
4 cups all-purpose flour
Beat the sugar and butter until light and fluffy. Add the eggs 1 at a time, beating after each addition. Then add the water and vanilla.
Sift the baking powder and flour together and mix into creamed mixture. Cover and chill 1 hour.
Preheat oven to 350 degrees.
Roll out the chilled dough to a thickness of slightly less thanžinch. Use a 2-inch biscuit cutter or a glass to make cookies. Place on ungreased baking sheet and bake 12 to 15 minutes.
Note: Use real butter, not margarine, for this recipe. It's necessary both for flavor and texture.
