Grasshopper Cookies
Makes 2-3 dozen
1 1/2 cup brown sugar
3/4 cup butter
2 Tbsp water
10 oz milk or dark chocolate
2 eggs
3 cups flour
1/4 tsp salt
1 1/4 tsp baking soda
In a saucepan over low heat, combine brown sugar, butter, water and chocolate. Heat and stir constantly until melted. Remove from heat and cool slightly
Add beaten eggs and then dry ingredients. Blend well.
Make small balls and place on ungreased baking sheets. Bake at 350 for 6-7 minutes.
Filling:
1/c cup butter
1 box powdered sugar
2 Tbsp cream or milk
4 Tbsp Creme de Menthe
1 Tbsp white Creme de Cacao
Beat until creamy. You may need to add additional powdered sugar.
Frost one cookie with filling and top with second cookie.
