Goat Cheese amd Onion Ramekins



2 sweet onions, thinly sliced
2 cloves garlic, minced
1 tsp olive oil
1/4 cup dry sherry
1 1/3 cups non-fat milk
3 eggs, lightly beaten
4 ounces goat cheese, crumbled
1/2 tsp dried thyme
Salt and pepper

Preheat oven to 375 degrees. Lightly coat six 1/2 cup ramekins with nonstick cooking spray. Place in a square baking pan. In a 10-inch skillet, combine onions, garlic and oil and cook, stirring, over medium heat for 10 minutes, until soft but not browned. Add sherry and cook 2 minutes, until liquid is reduced by half.

In medium bowl, whisk together milk, eggs, cheese and thyme. Add the onion mixture, salt and pepper to taste. Divide mixture between the ramekins. Bake 20 to 30 minutes, until set.

*This recipe is not baked in a water bath.
