Country Corn and
Southwestern Beef Salsa



Ingredients

1 pound ground beef
16 ounces of your favorite salsa
1 package (1.25 ounces) taco seasoning mix
2 cups instant polenta
1 can (4 1/2 ounces) chopped green chiles, drained
2 cups shredded cheese


Brown beef in a large non-stick skillet over medium heat, until no longer pink. Break up into small bits as it cooks. Drain well.

Stir in salsa and taco seasoning mix; cook over medium-low heat for 3-4 minutes, stirring occasionally.

Meanwhile, prepare the polenta according to package directions. Stir in the chiles and 1 1/2 cups of the cheese.

Serve beef mixture over the polenta; sprinkle with remaining cheese.
