
1 large white onion, finely chopped
1/2 green pepper, finely chopped
1/2 red pepper, finely chopped
3 stalks celery, diced
4-5 cloves of garlic, finely chopped
2 pounds ground beef
Salt and freshly ground pepper
1 tsp ground cumin
1 tsp freshly ground coridander
1/4 tsp dried red chili flakes
1 package chili seasoning mix
2 boxes Pomi brand Italian tomatoes
In a large skillet, saute the onions until they soften. Add the peppers and continue to saute until onions are translucent. Add the celery and garlic. Cook for a few minutes.
Crumble beef into vegetables and add salt and pepper. Cook, stirring occasionally, until beef is cooked. Add tomatoes and seasonings and stir to blend.
At this point, you can either leave the chili in this pan and continue to cook, or transfer to a slow cooker and leave on low.
Serve with grated cheese.
