Chile Relleno Casserole
9 large eggs
1/4 cup heavy cream
1/2 cup jack cheese, grated
1/2 cup cheddar cheese, grated
1 - 4 oz can mild green chilies
1 chopped red bell pepper
a dash or two of tobasco
salt and pepper to taste
Whisk eggs and cream together until well blended. Add remaining ingredients and stir to combine. Pour into a 1 qt baking dish that has been coated with olive oil. Bake at 350 for 30-40 mins.
