Artichoke Spinach Pizza




Crust:

1/3 Cup heavy cream
3 eggs
4 oz cream cheese

Topping:

1/2 Cup sour cream
1/2 Cup mayonnaise
1/2 Cup grated Parmesan cheese
Handful of shredded Swiss cheese
1 can artichoke hearts (drained & chopped)
1/2 pkg of frozen spinach (drained really well)
1 onion (chopped)
1 or 2 cloves of garlic (minced)
1 can of mushrooms (optional)

Beat cream cheese and eggs until smooth. Then beat in heavy cream. Pour mixture into a glass lasagne pan (sprayed with cooking oil). Bake on 375 for 15 minutes. Let cool for 10 minutes and turn oven down to 350.

Meanwhile in a bowl, mix all ingredients except spinach and artichokes. Squeeze all the excess water from spinach and artichokes and then add to bowl and mix well. Spread over crust and bake uncovered on 350 for 35 minutes.
