Recipe from Mint
Quarter wedge of fresh lemon or orange
Superfine or Baker's sugar
Ice cubes
5 tablespoons Absolut Citron vodka (21/2 ounces)
1 tablespoon Harlequin orange liqueur (1/2 ounce)
11/2 teaspoons freshly squeezed lemon juice (1/4 ounce)
11/2 teaspoons freshly squeezed lime juice (1/4 ounce)
1 tablespoon medium simple syrup (1/2 ounce; see note)
1 tablespoon passion fruit puree or other fresh fruit puree (see note)
Partially slice the fleshy membrane in the center of the lemon wedge. Insert the slice along the top rim of a large martini glass, held upside down, and pinch to lightly coat the inside 1 inch and outside 1 inch of the rim. Lightly coat the rim a second time.
Fill a deep saucer or dish with the sugar. Press the glass into the sugar at a 45-degree angle so that the wet surfaces are lightly and completely coated with sugar. You don't want a heavy crust or "patches." (Don't be discouraged; this takes a little practice.) Set aside.
Fill a shaker or pint jar (with lid) with ice. Add the vodka, orange liqueur, lemon juice, lime juice, simple syrup and fruit puree. Shake vigorously, then strain into the prepared martini glass, being careful to avoid the sugared rim. Serve at once.
Note: At Mint and at 820, Lucy Brennan uses passion fruit puree that she buys through a specialty wholesaler. She suggests making your own fruit puree by blending or pureeing the fruit of your choice and, if necessary, adding a little superfine sugar to sweeten.
